We can understand the feelings of anxiety around these uncertain times. Schedules are adjusted, work is now remote, and for some, going to the gym is no longer an option. But we can focus on what we can control, which includes what we feed our bodies. We wanted to share a simple no-bake recipe that we love: Peanut Butter Oat Energy Balls. This protein-rich recipe is a great snack to keep us healthy and happy. 

Makes approximately 2 dozen.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup coconut flakes
  • 1/2 cup natural peanut butter
  • 1/2 cup flax seed
  • 1/2 cup cocoa nibs (or mini chocolate chips)
  • 1/3 cup honey (or sub maple syrup or agave)
  • 1 teaspoon vanilla extract

Instructions

  1. Mix all of the ingredients together in a bowl until fully combined.
  2. Roll the mixture into one-inch rounds and place on parchment paper.
  3. Place in freezer until firm. 
  4. Store in the refrigerator in an airtight container.
